Happy New Year, Sports Mamas!
I was lucky enough to be able to spend the last 17 days staycationing with my boys! The last time I enjoyed that much time off was after giving birth!
Here are a few snapshots from my time off:
I finally got around to making another batch of energy balls. I even caught No. 3 reaching for them a few times!
The recipe is SO easy! Just combine all ingredients in a large bowl; 1 cup of old fashioned oats, 1/2 cup of semi sweet chocolate chips (I use the minis), 2 tablespoons of honey, 1/3 cup of ground flaxseed, 1/4 cup of unsweetened coconut flakes, 1 tablespoon of Nutella (yes, Nutella! It’s the secret ingredient!). Once combined, stick the bowl in the fridge for about 15- 20 minutes to make the mixture less sticky. Finally, roll into balls. That’s it!

We took our annual trip to the drive-thru light show.

No. 3 is the best sous chef! (Shhh, don’t tell his big brothers!).
I also made this super easy, yet super yummy Oreo pudding pie!
Oh, and Santa came! And everyone was on the nice list!
Christmas was wonderful.

And what would (our) winter break be without a little ball?
All good things must come to an end though.
Although coming back to a desk that looks like this isn’t too shabby, eh?
